Włodarczyk had been hoping to set a new world record at the International Association of Athletics Federations world championships, a biannual event.
Competing with a hand injury, Włodarczyk's first three attempts were disappointing with one foul and two below 72 metres.
But she managed a 77.39 on her fourth try, enough to guarantee gold, and improved on it again in her final attempt.
Poland's Malwina Kopron won the bronze medal with a 74.76-metre throw - a personal record - behind China's Zheng Wang, who threw 75.94.
Joanna Fiodorow, another Pole in the competition, threw 73.04 and came sixth.
Wlodarczyk, who turns 32 on Tuesday, won the world championship in Berlin in 2009 and Beijing in 2015.
Polish President Andrzej Duda and Prime Minister Beata Szydło congratulated Włodarczyk on her Monday win.
The IAAF World Championships started last Friday and end on 13 August. (vb/pk)
